３／Using Roasted Bourbon Casks
A barrel craftsman at Sanshiro Taru Koubou in Inami, Nanto City, Toyama Prefecture scrapes off the charred layer inside the bourbon barrel and carefully toasts it to create a special roasted bourbon barrel. Unlike charring, which raises flames all at once, toasting requires exquisite temperature control, so it requires a high level of skill, but it produces a unique fragrant aroma.
